It’s been a while

And things have been crazy. So I’ve spoken about how I don’t like the Hungry Girl Cookbooks because they use ingredients like “fat free liquid egg substitute,” What is that? Anyway I do have one of the cookbooks. What I like about some of the recipes is that I can tweak it, use real eggs whenever I want (but it’s also not like I eat eggs).

So the recipe that I’ve become fond of is the Too EZ mac and cheese

2 c. Uncooked whole wheat blend rotini Pasta (I used elbow mac)
6 c. (24 oz) frozen Green Giant (they say Cauliflower, I say) Broccoli and Cheese
3 wedges The Laughing Cow Light Original Swiss Cheese
And by my own invention 1/2 c. Fat free cheddar cheese (shredded)

1. Cook the pasta then set aside.
2. Prepare the broccoli and cheese as directed, then pour the pasta into the hot cheese.
3. Stir in the laughing cow cheese and the 1/2 c. Cheddar, make sure it all melts.
Then you’re done. This is great for the days when it’s about 9 pm and I realize that I have my internship at 9 the next morning and need lunch.
