Chicken Pesto Pasta

Wednesday has come and gone again!  The day that I have class from 2:30-10.  So I have to make myself dinner because I don’t really have time to get it and eat it.  What did I make this week?  This week I made, wait for it…drum roll, please…. Chicken Pesto Pasta.   And I did not use a recipe.

I don’t think you understand my confounded need for recipes.  I need to know how much, how long, and exactly what I should do.  But no, I looked at a recipe and got the general idea.  It called for bow-tie macaroni but CVS didn’t have any and walking down to Shaws was not happening.  So I bought Rigatoni.  I already had the Pesto from the last time I went down to Shaws and it said to use half a cup.  I eyed it and for the amount or rigatoni that was there it didn’t seem to suffice.

I sprinkled some Parmesan cheese on top and it makes it delicious.  I’m so proud of myself for making this without a recipe.  I’m incredibly impressed because of my heavy reliance on recipes that I was able to break away from my old habits and start making my way on my culinary journey.
